‘An apple a day, keeps the doctor away’ or so goes the old English proverb. Yet, the British love affair with the apple runs far deeper and further than just that of something to nourish us. From Newton’s apple epiphany to Eve’s forbidden Eden fruit, very few other fruits have had as big an impact on our culture as that of the humble apple.

For cider-maker’s son James Rich, Apple is a celebration of the fruit in all its forms. Everything from the apple blossom to the fallen fruit can be used in cooking, making apples a hardy, versatile and delicious essential in the kitchen. From whole apples to apple compote; cider to cider brandy, Apple boasts almost one hundred recipes featuring all kinds of varieties. You’ll find traditional old favourites, as well as some new experiments and combinations.

Apple flavours can be delicate and complementary, floral and simple or they can be bold, sharp and stand out from the crowd. You’ll find Light Bites, whether that’s a nutritious breakfast of Nutty Apple Granola, or tangy Goat’s Cheese, Apple and Honey Tarts for an easy picnic lunch; Feasts soaked in cider, from a wholesome Chicken, Cider and Cheddar Crumble for supper to Braised Pork Knuckles In Cider cooked slow and steady for an added depth and enhanced flavour; Sides and Sauces where sharp and tangy flavours transform flavour combinations; Sweet Things to treat yourself with, whether it’s an Autumn Fruit Pavlova with Apple and Vanilla Cream or a refreshing Cider Sorbet on a hot day. It was rediscovering some old family favourite recipes that gave James the idea for Apple, and a wealth of family knowledge gleaned from years watching the fruits grow and harvesting them in the orchard helped form the basis for a host of brand-new ideas, updating his heritage for a whole new generation of apple lovers.

About the Author

James Rich is a Somerset-born and bred, cider-maker’s son, and his family has been making a living from apples for centuries. James grew up helping his dad at work: planting the orchards, pressing the apples to gather the juice, and even helping to clean the giant 5,700-litre (10,000-pint) oak vats that are used during the fermenting process. A passionate home cook, as a child James was encouraged to explore food and flavour in the kitchen by his grandmother, who showed him the basics and helped develop his cooking. He now divides his time between Somerset and living in London, working as a food writer.
